That's a Wrap!

A simple, healthy & flavorful sandwich wrap... Very Mediterranean!

You will need the following:

Pita bread (large Arabic style)
Labni / Kefir cheese (concentrated yogurt)
Your choice of olives (nothing canned)
Sliced tomato wedges
Chopped green onions or thin sliced regular onion
Fresh mint leaves
Fresh basil leaves
Something crunchy like - sliced cucumber, bellpepper, radishes, etc. (your choice)
Salt
Red pepper powder (I like to use Syrian or Korean)
Olive oil

Make sure all your ingredients are ready before you begin!

1. Heat up you pita bread directly on a gas stove top.  Keep flipping your bread over direct flame until hot and slightly golden in color.  Be careful not to overheat and also not to burn yourself!

2. Place your pita on a lage flat plate with the darker side down.

3. Spread your Labni (concentrated yogurt) right down the center.  Use approx. 2 tablespoons.

4. Then place olives back to back right down the center over your Labni.

5. Now everything else right down the center, but save your seasonings & olive oil for last.

6. Wrap tight while holding everything in.

Tip:   If you can't find any Labni / Kefir cheese (concentrated yogurt) @ a specialty or Middle Eastern market, you can make your own by mixing in a few pinches of salt to about a cup of plain yogurt and then pouring your mixture into a cheese cloth and letting it drain for a day or two until you have a texture that is between the consistency of cream cheese & sour cream.

Tip:  You can also wrap a paper towel or two around one end of your sandwich wrap for easier eating.
